Wine plays a vital role in a meal whether at home or in a restaurant. In our opinion, every meal should begin with a glass of sparkling, a dry sherry or fresh riesling to prepare the palate. Nick has offered some food and wine pairings to illustrate the processes for choosing the best matches for the dishes in this book.
The wine list at Bentley is a constantly evolving document. Every wine on the list has a personality and tells a story. The goal is to give people something out of the ordinary, to introduce new wines to the public, wines which thrill and have a point of difference. Anybody with enough money can put together a list of big-name, trophy wines; anybody can buy Domaine de la Romanée-Conti, Lafite, Salon, Dom or Grange. These wines are not hard to get, but they don’t necessarily make a great list. What makes a great list is a collection of hard-to-get yet interesting wines at prices to suit a variety of budgets.
