Whole chicken is easy to cook and universally loved. And unlike most other chicken preparations, its appearance creates an elegant, even festive atmosphere. Generally speaking, when you buy a whole chicken, you may have to pull out its neck, liver, and perhaps heart (stored, wrapped in plastic or paper, in the cavity); you can cook or discard these. Though it’s not essential, many people like to rinse chicken before cooking; if you do so, dry it well before proceeding.
