I don’t remember who said to me, “You must have meat at a big meal; it brings closure.” It could be an ancient statement or a recent one. But the fact is that the heaviness and richness of most meat dishes give a kind of satiety that it is difficult to obtain with other foods. I believe this is why we continue to eat it, regardless of ethics or health. Also: we like the flavor.
This chapter is organized not by types of meat but by cooking technique, perhaps a bit unusual. But meats can often be substituted so freely for one another that I believe this makes sense.
