Our taste for vegetables has grown with their increased availability and increased variety. Still, it’s arguable that locally grown vegetables, in season, beat the pants off anything else and that simple vegetable preparations are best of all. Nothing, for example, tastes better than freshly picked steamed peas or asparagus.
That’s not always what you’ll have, of course, so we look for ways to add flavor to store-bought vegetables (which are usually less than ideal; there are times you can do better with frozen).
