Sweet peppers, though not as varied as chiles, still have their differences. Green peppers are unripe peppers; though they have their uses, they’re never as sweet as red (or orange or yellow) ones. A mixture of more than one color is always great. Longer peppers have thinner flesh and generally are better for frying than grilling (it’s too easy to burn them on a grill).
