Pumpkin, butternut, acorn, hubbard, and a dozen other winter squashes can all be readily substituted for one another (and most can be used in place of sweet potatoes and vice versa), but my preference is almost always butternut, because it’s smooth skin makes for easy peeling. And since peeling is the most challenging aspect of cooking winter squash, that’s a strong advantage.
