One of the most important parts of the cake making process is preparing your pans so that your cake will release easily.
For cupcakes, I recommend using paper cupcake liners. While you can simply grease your cupcake tins, liners provide a much easier way to serve and transport your cupcakes.
If you will be turning your cake out of the pans, as with a layer cake for instance, I recommend spraying your pans very well with non-stick spray and then lining the bottoms with parchment paper. This will ensure that the cake releases easily and doesn’t stick to the bottom of the pan.
