Raw poultry and game birds should be handled with care. Do not cut up raw chicken or duck on the same board or work surface on which you intend to cut up anything cooked or foodstuffs such as salad that are going to be eaten raw. The dangers of cross-contamination are higher with poultry than with most other meats.
Ideally, keep separate cutting boards for cooked and raw food. Alternatively, use one side of the board for each purpose on a permanent basis. Otherwise you should scrub well between uses. The same goes for any knife you use.
