Freezing Fresh Noodles

After pasta has dried a bit—just enough so the noodles won’t stick to each other—it freezes very successfully in plastic bags and keeps almost indefinitely. Fine noodles tend to break less if they are dried in very loose coils, formed around your hand, of a few strands each.
