For up to a pound (dried weight) of noodles, boil 6 or 7 quarts of water and salt it generously after it boils. When it boils again, sprinkle in the pasta, stir occasionally with a long fork, and watch the pot—the pasta will be done very quickly. Dried pasta will take slightly longer to cook than fresh, but it requires less cooking time than the store-bought. Test a strand every half-minute or so by biting. Stop the cooking by pouring in 2 cups of cold water the instant the pasta is done to your taste.
