Books are huge, overwhelming, life-encompassing beasts. And this one, which started as a dream on the streets of Paris, is now alive in our hands thanks to a multitude of people who cared as deeply as I did about bringing it to fruition. To each and every one of you I am thankful.
First and foremost the chefs. The hardworking foot soldiers of our culinary world who found an email from me in their inbox one day and so willingly responded with their time, talent and patience. One email turned to many, which turned into phone calls and, where geographically possible, coffees, meals and some of the most exciting and heated discussions about food and culinary trends I am ever likely to have. I will forever treasure this process.
