Dr Paul Tailing, a Cornish prop forward, big beard, barrel chested and with hands like boiled crabs, headed north about a decade ago.

A Doctor of Philosophy, he also has another hat. As well as checking standards of animal welfare and crop management, he can be found spending his evenings and weekends with his free range poultry, looking after the hens and geese on his land around Harome. He kills and cuts for us at The Star as well as a number of other well-respected establishments around North Yorkshire. His supplies of local game throughout the autumn and winter months are second to none: the produce off the estates and moors still seem to have the seasons and countryside running through their veins.
