I was in the middle of a Sunday night dinner service at the Sydney Opera House’s Bennelong restaurant when the phone rang.

‘Hi, Mate. My name’s Matt Moran. Have you got time for a chat?’

I told him to call me back tomorrow and put the phone down.

I said to my colleague, Andy. ‘I should have taken that call, shouldn’t I’?

‘Yeah, probably’, he replied.

From the multiple awards and chef hats at Aria Restaurant Sydney to the suburb of Hunter’s Hill, about 10 kilometres north-west of the Sydney CBD, it’s been an exciting yet challenging experience to create a suburban restaurant.
