Straight Doughs are simply doughs in which all the ingredients are mixed at once. None of the flour is pre-fermented; in other words, there is no sourdough or levain build, nor is there any sort of sponge, and no pâte fermentée, biga, or poolish is used. This saves time of course, but it also means the breads lack the benefits of pre-ferments.
