Wild yeasts grow naturally on (and in) the apples themselves, and they will begin to multiply in your juice. After a couple of days, fermentation should start in earnest. Although this natural process can produce exciting, complex flavours, fermenting with wild yeasts can be a bit unpredictable and, er, wild. You may wish to play it safe by using a shop-bought cider yeast; when added to the juice, the cultured yeast will crowd out the wildlings and commence the fermentation process.
