The mention of crayfish often throws confusion into the conversation, as most people’s perception of a crayfish is the larger saltwater, lobster-like species known by the same name in many other countries and often called ‘spiny lobster’ or rock lobster’. Our saltwater version of the same lobster species is also called crawfish, similar in name and enough to confuse even the experts.
Small freshwater crayfish rarely reach the table, that is unless you are in the know. It’s beyond me why, because they plague our rivers, ponds, lakes and gravel pits, and munch their way through anything in their path, including vegetation and fish eggs.
