I first met David and Alison Lea-Wilson at the International Food Exhibition in London’s Docklands about 3 or 4 years ago. What a breath of fresh air - a new salt company to complement our world-famous Essex counterpart. The salt crystals had an interesting shape and the salt itself seemed rather different from the sea salt we’d been used to, so I couldn’t wait to pay a visit.
My trip to Brynsiencyn, where they’re based, turned out to be quite a productive foodie trip before my mate’s wedding in Roscolyn. In 1981, David and Alison fell in love with Anglesey after leaving university, but had no cash. Their first business venture was breading oysters and selling wet fish to local hotels and restaurants from their small shop. The fascination their customers had with their fish display was incredible, and they seemed more interested in the fish themselves than cooking them.
