Cookies have become an American passion thanks to Famous Amos, Mrs. Fields, and others who have tried to create the world’s greatest chocolate chip cookie. My own favorites for years have been made by Pepperidge Farm, a company that seems to have a knack for making affordable, addictive, original cookies. The general trend has been toward substantial size, crispiness with softness in the center, and a burst of flavor in each bite. The days of the simple sugar cookie or the basic chocolate chip are gone. Even though this book is primarily about bread, I want to give one cookie recipe that I think captures the spirit and direction of what is happening in the cookie world.
