I love making salads and they were the big success story of The Parlour – we didn’t start out having a salad bar but they just crept on and on until they became our trademark. I’ve always tried to keep them simple, colourful and healthy and, of course, really, really tasty.
At Cambo we grow salad leaves year-round so we have a steady supply and I can always make use of whatever vegetables and fruit are in season or take advantage of a glut. The dressings are crucial as that’s what will really make a salad sing.
