What a lot of people really love about a café is an excuse to go and have a piece of cake. It’s hard to resist a counter full of sweet stuff, and we don’t hold back on our cakes, muffins and biscuits – they look beautiful, taste even better and will always be big and moist and crumbly. But there’s nothing better than having something homemade, and all these recipes are as fun to make as they are to eat. I’m not the best pastry chef in the world, so a lot of the recipes that I make are very forgiving – everything here is pretty much foolproof. As ever, the quality of the ingredients counts: use large, free-range eggs (at least, if not organic), and the best butter and darkest chocolate you can get hold of.
