The town of Xico, in the state of Veracruz, is an enchanting place reached by traveling through fragrant coffee fields that is renowned throughout the country for its mole de Xico. Because the region grows a lot of fruits, including citrus and berries that are used for local medicinal liqueurs and cure-alls, their dark, thick mole includes a higher percentage of dried fruits, including prunes, plantains, and apples, than most other moles, so it is sweeter and also nuttier. You’ll find my version of the one served on the lovely patio at El Mezón Xiqueño with their squawking guacamayas, or macaws, and beautiful indoor greenhouse.
