With so many vegetables to choose from, vegetarian meals in the Caribbean are imaginative and flavourful.
The most obvious groups of vegetarians in the Caribbean are the Indian Hindu population in Trinidad and the Jamaican Rastafarians. Roti made with fillings of chick peas, pumpkin and potatoes are very popular wherever Indian communities are found, and the Caribbean boasts delicious vegetarian curries with flavours unique to the islands.
The Rastafarians’ cooking style is called ‘ital’. Their diet excludes salt, meat and chemicals; pork and shellfish are considered the most unholy foods. Food is served in as natural a state as possible and it takes a little getting used to, but the true flavours of vegetables and provisions shine through. Rastafarians use a lot of soy, coconuts and peanuts and all sorts of herbs.
