Fresh catch of parrot fish

The variety of fish and seafood found in the islands is overwhelming. We eat everything from mahimahi, flying fish and shark to calamari and sea urchin. Very important in our diet is dried saltfish, pickled herring and mackerel which can be stored without refrigeration.
It’s difficult to find substitutes for Caribbean fish as tropical sea life differs from cold-water varieties in both texture and taste. Freshness is an important virtue and a reason some recipes do not travel well.
