Local beef is popular in the islands, but it tends to be expensive. Cuts of beef are often stewed to make them tender. Ground beef or mince adds flavour to a meal where the budget is tight. Rare beef is not popular, but pickled tongue, stewed ox tail and cow foot with broad beans are all traditional dishes.
Pork is readily available and popular especially in the Spanish-speaking islands. Ham, bacon, sausages and salt pork are often used in cooking. Roast suckling pig is a big event and is sometimes prepared for a celebration. The Chinese population also eat a lot of pork.
