For me, Caribbean entrées are comfort foods, and they have every right to be this way. Families would bond during mealtime, and whoever cooked the meal, be it the mother or father or someone else, felt a sense of pride in providing quality meals for their family.
Curry is a main dish that is sometimes made in Caribbean households, particularly in Guyana and Trinidad and Tobago. Curry is often served with roti and rice. You’ll find roti recipes and many rice dishes in chapter 6.
In Barbados, pasta and rice dishes are popular with dark spicy stews colored with burnt sugar. Countries in the eastern Caribbean, such as Saint Lucia or Saint Vincent and the Grenadines, have large agricultural bases, and some of their dishes include ground provisions like yams, green bananas, breadfruit, and dasheen (which is also known as taro in some places, though not in the Caribbean).
