Caribbean cuisine has been influenced by many cultures and combines interesting textures and bold flavors, which range from sweet to spicy to a bit of both. Sadly, our cuisine has been and continues to be misrepresented and often neglected. I hope to shatter misconceptions about Caribbean cuisine, including that a dish is tropical simply because it contains a bit of pineapple or coconut. In the glossary, I will discuss some of the ingredients that give Caribbean food its unmistakable character. I will also include ingredients that may be mysterious to those unfamiliar with vegan cooking.
