Here, I explain some of the unfamiliar ingredients in this book, with information on where to find them or how to prepare them, if appropriate. This glossary will also give you a good idea of some of the other names for the ethnic vegetables and other ingredients called for in this book. If you are not sure about a name, try an Internet search, or contact me via my blog at taymermason.com. And speaking of the Internet, if you discover that you cannot find some of the ingredients this book calls for at your local markets, look for them on the Web. Other than fresh ingredients, many are available from online vendors.
