Essential Equipment for a Caribbean Kitchen

Several people have asked me if they need any special equipment to cook Caribbean food. My answer is yes and no. Many special kitchen tools are used in the region, but these days most Caribbean homes have typical modern-day, international-style kitchens. Most of the recipes in this book do not require special equipment. There are just a few things I would like to highlight that you will need when cooking from this book.
