The Caribbean region is home to a variety of fruits and vegetables that are slowly making their presence known in other parts of North America. Some vegetables that can be turned into flour are cassava, sweet potato (both orange and white), breadfruit, and true yam. Pea flours are also useful for making Indo-Caribbean dishes like doubles and pholourie.

Flour making came about because of the lack of importation of wheat flour in the past, so home cooks needed to turn to the starchy vegetables being grown locally to make flour. Almost 100 percent of these flours are gluten-free.
