Daddy wasn’t one to talk on the phone, but after he got a computer and taught himself to type, he became an assiduous proofreader of my manuscripts. A typical email might go like this one:

Hey Bub,

Just a quick note to tell you that I made the potato croquettes, but you didn’t specify what kind of potatoes. I used russets, because that’s all they had at the supermarket in Palatka, which is a half-hour drive that I try to make only once/week. You say “boiled and peeled” but in an earlier recipe you said steaming was better. I also remember you telling me that they don’t have russets in Italy, but you are calling these Italian. You say to “form little tubes of the mixture about the size of 2 fingers,” but tubes are hollow. Why don’t you just say form croquettes?

I divided the recipe by three because it was just Lila and me, and your yield is dead-on. I was hoping to get 6 croquettes—3 apiece—but I made 4 bigger ones instead. (You say the full recipe makes 16.)

Just wanted to give you a heads-up on the above. They were delicious. I didn’t have a shallot, so I used onion, and I didn’t have fresh herbs except mint. We were having lamb, so that worked out!

Have you made the paella? I’m not giving up your mother’s paella pan any time soon.
