Like you I once started my journey to become a chef, writes Chandos Elletson. I was past thirty and had been a home-cook for all my adult life. But that’s as far as it went. I knew relatively little about professional cooking but had sampled it at a few highly select restaurants in London.

When I started my journey I was living in Los Angeles and needed to work. I went on a professional cookery course and was taught by a really great teacher in her prime. I am still indebted to her all these years later. Her name was Teri Appleton-Villanueva.
