The 15th century saw China’s emergence as a maritime power, and trade links were forged with other nations. Many foreign ingredients were brought back by seafarers and incorporated in the local cuisine. The Portuguese brought chilli peppers, which were embraced with relish, especially in the western areas. The construction of the Grand Canal in the 17th century facilitated the transportation of rice from the south.
