These days, Beijing is the political and economic hub of modern China. However, barely a decade ago, the soaring high-rises of the exuberant capital rose from a ground that was still busy with scenes from an agrarian past. Farmers pulled their ploughs across fields just a stone’s throw from the urban concrete jungle, and it is this juxtaposition of old and new that underscores the essence of Mandarin cooking.

Whether simple or grand, every dish has its beginnings in the pastoral history of the region, and soups such as White Fungus & Chicken Soup, or Sour-and-Hot Lamb Soup, grace the farmer’s table just as easily as the imperial dining room.
