I am lucky enough to have spent much time in Beijing, and had the pleasure of dining in some of the city’s most famous restaurants, as well as sampling various dishes from its street food menus; I came away as sated with one as the other. Throughout history, the cuisine of Beijing has been influenced greatly by that of Shandong, so good-quality fish and shellfish dishes take pride of place on many a restaurant menu. Prawns and scallops are cooked to perfection, and both sea and river fish are given special treatment by top chefs.
