The Yangtze River delta is a lush rice-growing landscape that produces some of the world’s best grains. These range from fragrant jasmine rice to sticky glutinous rice from which comes not only rice wine but also rice noodles. Although wheat noodles are sometimes eaten here, it is rice and rice noodles that form the basis of most meals. Boiled or steamed rice is served several times a day, sometimes as a side but often in the form of fried rice dishes, such as the gloriously tasty Yangzhou Fried Rice or the Shanghai classic, Fried Rice with Mixed Meats.
