Western China is a landlocked area far from the bustling, cosmopolitan centres of Beijing and Shanghai. Traditions founded here many centuries ago have therefore persisted over the years, and certain festivals with their attendant foods are celebrated today in much the same way as they always have been. From sweet almond cakes for the Moon Cake Festival to glacé or candied fruits for the Lunar New Year, the many delicate and tasty little snacks are a hugely important part of the rituals.
