Rice is to most of China what bread is to the Western world, and more. A familiar Chinese greeting is “Have you eaten rice yet?” It is more than a staple; it is an integral part of every meal, eaten with main dishes to extend them and to act as a foil for sauces. The only time rice is not served with a meal is at banquets, where it is served at the end to help cleanse the palate.
Although many types of rice are used in China, the two main types are long-grain white rice (Carolina brand is fine) and short-grain glutinous rice, which is more like an Italian arborio rice (at a Chinese market, ask for sweet rice). The Chinese prefer not to eat brown rice.
