The chocolatier is the artist whose skills are those of a painter, sculptor, and architect with a degree in gastronomy, who will engineer the lightest, fluffiest, and tastiest of creations. He will whisk, fold, mold, and cajole the Ingredients into truffles, pralines, cakes, and a larder full of other little pastries—a hedonist’s Imperative. A top pastry chef or chocolatier will train for many years before finally taking charge of a pastry department in a top hotel or restaurant.
