Mixing Dough in a Food Processor

Making pie dough is one of the things a food processor does best—provided that you don’t overmix or overwork the dough. Because it is so powerful, the machine cuts together flour and fat in seconds, without heating up the fat.

Place the flour and the other dry ingredients in the food processor. Pulse on and off to combine and aerate them (this replaces sifting). Add the cold butter and/or shortening, cut into pieces. Pulse several times, just until the mixture is crumbly. Now, sprinkle on the minimum amount of liquid you think you’ll need; pulse until the mixture starts to clump together. Add more liquid if the mixture is too dry to hold together.
