Be sure to take any custard pie out of the oven when it’s still slightly wobbly but not liquid in the center. The custard will set up further after you take it out. If overbaked, a custard-filled pie can crack as it cools.
In general, baked pies should not be chilled. But since most cream and custard pie fillings must be chilled, these pies are an exception. To bring up their flavor, take cream pies out of the refrigerator a few minutes before serving.
