Begone dull salad: for as each of the seasons of the year arrives the fortunate herb gardener is able to prepare unusual and delectable salads that reflect the kaleidoscope of different leaves and flowers harvested from his plants. So that, for example, a spring salad is based on the fresh green and yellow shades of new growth while an autumn salad glows with the claret and burgundy tones of the end of summer. When concocting your own salads, look for colour and flavour harmonies in the leaves and blooms so that each salad has a distinctive character.
