Butter is one of the most delicious vehicles for the aromatic essential oils in herbs. And there are very few dishes, such as soups and sauces, freshly cooked vegetables or a warm loaf of bread, that are not improved with a pat of a well-flavoured herb butter. The simplest herb butter is no more than a blend of freshly chopped herbs and a sweet unsalted butter. The result stores well in the refrigerator for 2-3 weeks and in the freezer for 2-3 months.
