Harvesting and Preserving Herbs

Every herb has a time of optimum growth when its leaves are highly aromatic and the plant is producing the maximum amount of essential oils. This is the moment that every prudent herb grower anticipates with pleasure, for herbs harvested at this time are in the peak of condition and in the best state for preserving for use later in the year.

It is best to harvest the majority of herbs just before they come into flower. After flowering, the plant concentrates on reproduction and its energies are diverted to producing seeds.
