The world of dried chiles is vast. Several dried chiles are used in the book and each has its own unique flavor. Chile powder is also called for in several recipes. The most important thing to note is that I’m referring to pure chile powder with no other seasonings added to it. Supermarket “chili” powders or chili seasonings include a blend of spices and seasonings. Pure ground chile is exactly what it sounds like—dried chile peppers, ground to a powder.
