Pesto freezes beautifully, but cheese doesn’t freeze particularly well—it loses something in both flavor and texture. If you are making pesto in order to freeze it, I suggest you leave out the cheese and then beat some into the defrosted pesto when you’re ready to use it. If you’ve already made pesto with cheese and end up with some left over, by all means go ahead and freeze it; it’ll be fine.
