These are the most expensive, but worth it for their sweet flavor and firm texture. (Whites are herbivorous.) As the name implies, many come from the Gulf coasts of America and Mexico, but there is also a substantial supply coming to us from Peru, Ecuador, and Chile. Most are wild-caught, but a growing number are being farm-raised, especially in China.
