It is useful to have cold meat around over Christmas but it must be full of flavour to contrast with the blandness of the cold turkey. Good salads, also, are essential at Christmas to accompany cold meats and turkey or to go with ready-prepared hot dishes so that you won’t have to be busy cooking vegetables at the last minute. I have included a few less usual salads which can be prepared and most of them dressed beforehand without losing their fresh appearance and taste.
