Apart from spirits and soft drinks (it is surprising how many people ask for cola or ginger beer) it is worth having Macon Blanc - dry and sharp. Serve well chilled. My favourite is the fragrant Chambery Vermouth, with ice and a slice of lemon. And, of course, sherry - Manzanilla, with its slightly salty taste, specially good with fish dishes or the smoky Aubergine Purée, or a Fino.
