None of the cookies in this book call for hard-to-find or unusual ingredients. But you’ll have best results if you use the same ingredients that were used to test the recipes. Follow these guidelines:

Butter Use unsalted butter for best flavor. If you’d like to substitute margarine for health reasons, go ahead. But if it’s expense or calories you’re concerned about, save on something else—nothing tastes like real butter in cookies. For greasing cookie sheets, either butter or solid vegetable shortening is fine.
