Milk Puddings

Rice pudding is by far the best of the farinaceous milk puddings served by tradition in Victorian nurseries. I have included the standard simple traditional recipes for semolina, ground rice, pearl tapioca and sago puddings and three recipes for rice puddings of increasing richness.
